Stuffed Peas Flatbread (Matar Paratha)

Stuffed matar parathas is a winter delicacy. They come in abundance in winters and are super sweet. I slightly spice the peas and stuff them in parathas to give a nice wholesome flavour. You could simply grind the peas and stuff them too if you are in a hurry. Parathas/Stuffed Flatbreads are loved by everyone in India and had with curd, butter or pickle or all together. J

INGREDIENTS: 

For the stuffing –

  1. Peas – 1 big bowl, 200gms
  2. Green chilli – 1, finely diced
  3. Cumin seeds – 1/2 teaspoon
  4. Ginger – 1 small piece, finely diced
  5. Lemon juice – 1 tablespoon
  6. Coriander leaves – 2 tablespoons, finely diced
  7. Salt – to taste

For the dough –

  1. Whole wheat flour – 1 cup
  2. Gram flour (besan) – ¼ cup
  3. Millet Flour – ¼ cup
  4. Oil – for shallow frying
  5. Salt – to taste

RECIPE:

  1. Mix all the flours in a big bowl and add 2 tablespoons of oil and some salt to make crispy parathas.
  2. Add some water and knead it to make a soft dough (though not very soft).
  3. For the stuffing, take a small pan and add oil to it.
  4. Add cumin seeds and allow them to crackle.
  5. Add ginger, chilli and saute them and add the peas and salt.
  6. Allow the peas to cook and add the lemon juice. Squeeze the peas and allow the mixture to cook on slow heat and dry out.
  7. Allow it to cool before stuffing into the parathas.Peas_mixture
  8. Make small balls from the dough and roll them with a pin.
  9. Add some oil and add 1-1/2 tablespoons of the stuffing depending on the desired thickness of the parathas.
  10. Close the paratha and make it into a round stuffed ball.
  11. Apply some dry flour and press lightly with the pin to make the stuffed paratha/flatbread.
  12. Heat a non-stick tawa or flatpan and place the paratha on it.
  13. Allow it to get slightly brown on one side and flip it over. Apply some oil on the brown side.
  14. Allow the paratha to cook and brown on the other side as well for 2-3 minutes and then flip again.
  15. Oil the other side as well and press with a serving spoon to make it crisp.
  16. Serve hot with butter/curd and pickle.Stuffed_peas_paratha_flatbread

TIPS:

  1. Add as much water to the dough as per your choice. Making an extremely loose dough might make it difficult to stuff them.
  2. You could add more chilli if you like to make it a bit spicier.
  3. Allow the mixture to cool before stuffing it otherwise the parathas would not bind properly.
